I would spell it Cohen. I have a friend whose last name is Cowan and his family pronounces it Cow-ann. I would under no circumstances give a child a name with the word 'cow' in it.

Actually, they pronounce it more like 'Cow-in'.

That's true, I know a Cowan that is like COW (moo) uhn.

I think Cohen is a great spelling for it.
