Sah-been-uh almost, with a little swallowed -uh on the end. Unless you're talking about the Sabine Women, in which case they tend to get anglicized to Say-byne.

As a proper name, I say "sah-BEAN" or "sah-BEAN-uh." As in "Rape of the Sabine Women," I say "SAY-bine." Who even knows why.
