Pick a favorite, just for the hell of it:

Saoirse Camille
Saoirse Clementine
Saoirse Ruby
Saoirse Genevieve
Saoirse Felicity
Saoirse Seraphine

(p.s. If you aren't familiar with the name Saoirse, it's pronounced seer-sha and is a Gaelic word for "freedom." I am aware that it's grafitti-ed all over Dublin by Irish nationalists; I doubt I'll ever live anywhere outside of Louisiana, much less overseas or in the UK, so I think I'd be safe using it. Getting people to pronounce and spell it correctly would be a whole other hassle, but for now let's just pretend that people aren't assholes. Pick your favorite combination!)

I like Genevieve (if pronounced the French way and not the American-ized way) and Camille.

i don't think any of those go very well, but clementine would be my first (and only) choice of what you have listed. i think a one syllable name would go best with that one.

To be honest, between the strong political connotations and the high improbability of anyone ever pronouncing it right (particularly in LA, where the Irish population is not particularly high), AND the fact that Irish names have gone tryndee and Irysh... I just wouldn't use it. You've got a lovely bunch of other names picked out there. Using Saoirse - a very strong name - in spite of all its meanings seems a little... obtuse, I guess.

Felicity Genevieve would be gorgeous.

I'm kind of iffy on the name Saoirse because it's not really even a name (kind of like Colleen), but I really really like it =/ But then again I'm all for word names.

I like Saoirse Felicity.

I don't think any of those go with Saoirse at all. For a name that Gaelic you'd need a middle name that's at least vaugely celtic.
You can't go mixing a Gaelic name with a French name in a case like this.

hmm i unfortunately don't think any of those fit really well. i was trying to think of other middle names that flow better, but couldn't think of any off the top of my head. i am tempted to suggest some irish ones to balance out the name, but you said you didn't want that, so... hmm.

I don't really like any of those, but I guess Ruby would be best.

Also, if this name is for you then your rationalization of "I doubt I'll ever live anywhere outside of Lousiana" may work, but if this is for a child, they may have a different lifestyle than you and may enjoy traveling and seeing the world or even moving permanently to the UK...just something to keep in mind)

May I suggest Sorcha?

Honestly, I think most of these are just way too complicated. With an ultra-difficult first name, I think it's really only fair to give another name that is more straightforward. (Also, given your penchant for double names, can you imagine trying to use any two of these together? Yikes.)

Saoirse Seraphine - Oh my, too much repetition. You have S, R, and a long ee sound in both names. Anyone with a lisp would be completely undone.

Saoirse Felicity - the flow is okay, but once again, this sounds like feeding time at the reptile cage - far too many hissy S noises for the combo to sound good. (I admit also that Felicity is such a prissy name that I'm having a hard time imagining it on your list.)

Saoirse Clementine - Here you are really not giving the poor child any kind of a break at all, as, if she chooses to avoid the stress of having to pronounce and spell her name for everyone she meets and use her middle name instead, she'd be doomed to endless "darling Clementine" repetitions. (With that said, I actually do like Clementine - I would just pair it with something short and sweet.)

Saoirse Genevieve - if you are using the French pronunciation, this is a little much.

Saoirse Ruby - The flow is uninspired, but it has a nice distribution of sounds, with the the lighter "ee" sound balanced by the darker and more voluptuous "u" sound, and the bubbly "b" balancing the hissy "s".

Saoirse Camille - Beautiful flow, family significance... of all of your combos, this is the best by far.

After reading all these comments and seeing this suggestion has not been made, would you use it as a middle name? The middle name is usually written on a form and does not NEED to be pronounced, or the bearer of the name says it out loud for the hearer to repeat and inquire about the spelling.

The reasons you like the name and the reasons you are wary of using it qualify it perfectly, to me, for a middle name.

*totally unrelated weird comment: the word looks like a Spanish or Portuguese verb to me. People will say So-eer-say or sow-eer-say.*

I used to do Irish stepdancing and one of the other girls was named Saoirse. It's a lovely name, but I do think you are going to have to deal with people a) thinking your family is very Irish (this girl's family was like 100%) and b) constantly mispronouncing and misspelling the name (everyone mispronounced this girl's name, and Pittsburgh has a fairly substantial Irish-American population).

I also don't think those middle names go very well with Saoirse (even though Felicity is definitely on my favourites list). It's a sort of complicated and "busy" first name, so I think I'd pick something shorter as a middle name. Ruby is the best choice up there. But what about something else simple, like Marie or Anne?
