middle name help

I have decided to change my name. I'm going to drop my last name (it's too long, hard to spell, ugly, etc.) and use my middle name as my last name. This will make my name Amanda Rose. I hate the idea of having only two names so I want a fun (within reason) middle name because Amanda and Rose are quite possibly two of the most boring names ever! Any suggestions on something that sounds good?

Edit: I'm Italian so something of that nature would be nice but I'm really concerned about rhyme-y names since most Italian girl names end in -a...help me! :)

It has the Italian feel to it, I think, but doesn't clash with Amanda.

Amanda Camille Rose sounds really pretty to me.

My middle name is Elena, after my Italian grandmother. Some other popular names from that side of the family are: Louise/Louisa, Maria, Vincenta, Matilda, Ida, and Isabel.
