I've only ever heard of the spellings Sookie and Sukie. I think the one on Gilmore girls was Sookie.

oh, I have no clue how to spell the actress's name on the show, I just knew it was the "same" name as the one I found on babynames.com. Or at least same general sounding name. lol.
