I've known two Yessicas and they were both hispanic, which leads me to believe Yennyfer would be a hispanic-ization (new word!) of Jennifer. Can't explain that second Y though.
The Y in place of a J is very common in Spanish speaking countries. I have cousins who are Yenis (Jenny) and Yoana (Joanna). I don't have an explanation for the Y and the F though. That's just odd.
