My first thought was Ellie, which of course has nicknames of it's own too.
Ella-Bella, for instance, if it's someone you're close to.

Or Bethy, which you may want to introduce as Elizabethy-bethy-bethy.

LilliBet is the nn the Queen of England had when she was growing up, and I really like that one. (Or LillaBet.) The capital B is just so it doesn't sound like Lillibit or Lillibut ;-)
But anyway, this gives Lily too, if you like it.

Annd, what about Elissa? So it sounds the same as the beginning of Elizabeth, rather than sounding different like Eliza does.

Plus of course all the other ones suggested.

And technically Nancy is also short for Elizabeth (in the same way that Peggy is short for Margaret, ie, in a way that makes no sense at all), but that might just confuse matters :-)
